A classic Indian sweet with a flaky, sugar-dried exterior and a succulent interior made primarily with maida or all-purpose flour, deep fried in ghee or oil, and soaked in sugar syrup. It is reminiscent of a glazed donut but differs in its layered texture and crunchy taste. It is known as balushahi in northern India and badusha or badshah in southern India.
